Granny Smith, Braeburn, Jonathan, Gravenstein, Suncrisp: The secret to this recipe is in the selection of your favorite tart baking apple.
Tart apples are firmer and crispier than the juicy, sugary apples generally reserved for eating out of hand (i.e. Red and Golden Delicious).
4 tart apples (to yield about 4 cups)
1/2 cup all-purpose flour
1/2 cup rolled oats
1/2 teaspoon kosher salt
1/2 cup brown sugar
1 cup hazelnuts
1/2 cup unsalted butter, chilled, small dice
Peel and slice the apples into 1/4-inch slices and spread into an 8-inch baking dish.
Chop hazelnuts coarsely by hand or in a food processor.
Combine all ingredients except the apples in a mixer (or by hand) until the butter is pea sized. Layer on top of apples. Bake at 375° for 45-50 minutes until apples are tender and topping is golden brown.
Cool slightly and serve with a scoop of vanilla ice cream or whipped cream. Serves 4 to 6 guests.
